8 6" flour tortillas
non-stick foil
4 slices swiss cheese
1 large sweet onion, thinly sliced
2 Tbs butter
4 3 oz links smoked sausage
1 cup sauerkraut, finely chopped
½ can sliced beets, finely chopped
8 tsp deli mustard
Preheat oven to 425, place 4 tortillas on foil lined baking sheet, top with cheese then a second tortilla. Cover pan with foil and set aside.
Slice onion, sauce in butter for 4-5 minutes or until onions begin to lightly brown.
Cut sausage almost in half lengthwise (butterfly it). Add sausage to onions, cut side down, cook 3-4 minutes on each side, stirring occasionally.
Bake tortillas 4-5 minutes or until cheese melts.
Place 2 tsp mustard down center of each tortilla stack. Add sausage, cut side up, then top with onions, sauerkraut, and beets.
